Explore the world of premium single origin dark chocolate. These three baking chocolates are some of our very favorites, and are ones that we use in our shops. Each chocolate has a distinct character, even though the percentage range is fairly close.
Cru Sauvage 68% Bolivian dark chocolate is a singular chocolate, made from small wild cacao beans foraged in the jungle. It has a lovely delicate flavor, with notes of rich chocolate, mild coffee, dried plums, slightly malty and a long bright finish. It works best in applications where the chocolate is the star. Some of the subtle flavors can be lost when combined with other things like dairy. This makes a beautiful water based ganache.
72% Arriba Ecuadorian Dark Chocolate is a classic. Simply delicious, it tastes just how a dark chocolate should. This versatile chocolate works well in everything. We would consider this generally to be a bittersweet dark chocolate.
Hacienda Elvesia 74% Organic single plantation Dominican Republic dark chocolate. This chocolate is distinctive and unusual, with flavor notes of mild tobacco, black tea, hints of orange and delicate citrus, and a long finish. This chocolate has a strong personality and it’s character will show through in the final product. Use where you want the flavor to stand out.
